Malabar Parota with Veg Kurma

Product Used: Asal Malabar Parota
Ingredients:
4 Asal Malabar Parotas
1 cup mixed vegetables (carrot, beans, peas, potato)
1 onion, sliced
1 tomato, chopped
½ cup grated coconut
1 tsp fennel seeds
1 tsp garam masala
1 tsp turmeric powder
2 green chillies
2 tbsp oil
Salt to taste
Method:
Grind coconut, fennel seeds, and green chillies into a smooth paste.
Heat oil in a pan, sauté onion and tomato until soft.
Add vegetables, turmeric, salt, and little water. Cook until tender.
Mix in the coconut paste and simmer for 5 minutes. Add garam masala.
Heat Asal Malabar Parotas and serve hot with the kurma.
