Malabar Parota with Veg Kurma

Product Used: Asal Malabar Parota

Ingredients:

  • 4 Asal Malabar Parotas

  • 1 cup mixed vegetables (carrot, beans, peas, potato)

  • 1 onion, sliced

  • 1 tomato, chopped

  • ½ cup grated coconut

  • 1 tsp fennel seeds

  • 1 tsp garam masala

  • 1 tsp turmeric powder

  • 2 green chillies

  • 2 tbsp oil

  • Salt to taste

Method:

  1. Grind coconut, fennel seeds, and green chillies into a smooth paste.

  2. Heat oil in a pan, sauté onion and tomato until soft.

  3. Add vegetables, turmeric, salt, and little water. Cook until tender.

  4. Mix in the coconut paste and simmer for 5 minutes. Add garam masala.

  5. Heat Asal Malabar Parotas and serve hot with the kurma.
