Rice Palada Payasam (Traditional Recipe)

Ingredients
Asal Rice Palada Payasam Mix – 1 packet (200 g)
Milk – 1 litre (full cream, boiled)
Sugar – 200–250 g (adjust to taste)
Ghee – 2 tbsp
Cashews – 10–12
Raisins – 10–12
Cardamom powder – ½ tsp
Method
Boil the milk in a thick-bottomed vessel and simmer on low flame.
Add the Rice Palada Payasam Mix slowly while stirring continuously to avoid lumps.
Cook on low flame for 20–25 minutes, stirring occasionally, until the palada softens and the milk thickens.
Add sugar and continue cooking for another 5–7 minutes until it blends well.
In a small pan, heat ghee and fry cashews until golden; add raisins and sauté until they puff up.
Add this to the payasam along with cardamom powder. Mix gently.
Serve warm or chilled as a festive sweet.
